Hello all… Another beautiful weekend here at Camp that saw the union of Rob and Nicole as husband and wife. The festivities began with a BBQ dinner after the wedding rehearsal on Chapel Island this past Friday night. About 40 or so guests stayed the night and awoke to a brunch on Saturday that was followed by some fun Camp programs and lots and lots of preparations. The couple was wed in the 4 o’clock hour on a gorgeous Saturday afternoon and guests arrived back at the Ocky Dining Hall around 5pm for cocktail hour followed by dinner and dancing [...]

Hello all… It’s that time of year where everyone puts pumpkin and “pumpkin spice” in EVERYTHING!! To most it’s a very homey taste… reminds us of the holidays… being home with friends and family… a blend of spices and flavors that warms us from the inside out in the approaching cool Fall weather. This weeks recipe comes from my assistant, Chef Kimmie. It’s her very own Pumpkin Bread recipe that is sure to fill your home with wonderful smells and entice your pallet. […]

Historic Anniversary and 6 Degrees of Separation…

By |2013-08-28T18:04:59-04:00August 28th, 2013|

Hello all… Today marked the 50th anniversary of the March on Washington in 1963 when Dr. Martin Luther King, Jr. delivered his historic “I Have A Dream” speech. It is noted as one of the largest political rallies in United States history for human rights. Just over a year later Dr. Martin Luther King, Jr. was honored with the Nobel Peace Prize, becoming the youngest recipient of the award at the time. The man standing in the photo above, Thich Nhat Hanh, was nominated by Dr. Martin Luther King, Jr. for that very same honor in 1967… but there [...]

Hello folks… Now and again when the season or the timing is right…. I reach back into my archives for old recipes and posts to see what we can bring forward again as I know our audience has grown and social media has changed the landscape of how, when and where we reach our audience… our readers… you. Well… this is the VERY FIRST recipe I posted… after assuming the role as Food Service Director here at Camp… from our snail mailed Camp newsletter we lovingly called “The Smoke Signal”. The Smoke Signal does not exist in it’s old format [...]

Presenting… our 2013 Camp Kitchen Staff

By |2013-08-18T19:14:18-04:00August 18th, 2013|

Hello all... I'd like you to picture, in your mind, an amount of food that would feed 1,600 hungry mouths. Now imagine how much time and energy and physical work it would take to prepare that much food. The people pictured above did that every single day here at Camp for every child, staff member and guest that came down our sandy trails and into one of our two dining facilities… or took their food "to go" on a day trip or an Overnight. On any given day our kitchen staff had up to 13 deadlines to meet… which means [...]

Hello all!! Being a Chef you get interested in all sorts of things. Obviously the food we eat comes from nature that is all around us… 24 hours a day, 7 days a week, 365 days a year. From the days when hunting and gathering were the ways to feed yourself and you family… to small scale cultivating and farming to feed your community… to today’s larger commercial farming that ships food around the country and around the world… food is what drives us. It’s one of the most basic necessities of all life on the planet. Wether you are [...]

Simple and classy summer salad…

By |2013-07-28T19:19:57-04:00July 28th, 2013|

Hello all... Here's a very simple Caesar Salad dressing recipe that is sure to please. The great thing about a Caesar Salad is that it is very "portable" if you are going on a picnic, to the beach or on a lazy canoe ride down a calm and cool river. All of the components to the salad (dressing, lettuce, cheese, croutons and optional toppings) can be stored separately in containers in a cooler until you are ready to eat… then toss them together and enjoy! Be careful to keep the dressing cold (with ice or icepacks in a cooler) because [...]
