From the Ocky Kitchen Cookbook…

By |2013-04-07T08:00:49-04:00April 7th, 2013|

Hello dear readers… This week I’m sharing an amazing recipe for my all time favorite cookie… the Coconut Macaroon. There is a place in Atlantic City, New Jersey called James’ Candy that makes my favorite macaroon and while these are slightly different it is a simple recipe that yields a spectacular cookie. I made these delectable treats for Easter this year and got rave reviews from friends and family. As a bonus these cookies are inherently Gluten Free for those of you concerned with gluten wether for allergy or other dietary reasons. Just be sure to check all the ingredients [...]

Hello all!! Yesterday morning Camp had a very special visitor. A delicious breakfast was enjoyed by one and all and in the middle of the meal the Easter Bunny stopped by to greet everyone. After having a chance to get their picture taken with our famous, furry friend, the Bunny accompanied everyone outside for a god old fashioned egg hunt! […]

Seasonal thaw…

Hello folks… As my title to this post may lead you to think about the weather… it is not about that. I am not a weather man and I have no idea what tomorrow or next week may bring in terms of temperature or precipitation. What I am eluding to is the fact that Camp is right around the corner we are beginning to move out of the winter projects mode and on to busier times ahead leading up to Summer Camp! A mental thaw, so to speak. […]

By |2013-03-17T15:59:55-04:00March 17th, 2013|

Hello all… My apologies for missing last weeks blog post. This week wrapped up our final Introduction to Cooking class for the Winter 2013 season of our “Introduction To…” courses. Week 3, Chef Nick and I taught the class how to make home made pizza dough and by the end of class each of the students got to take home 2 of the most original and interesting pizzas I’ve ever seen… and they got to take them home in real pizza boxes! One of our students even made one that looked like a bunny! With Saint Patrick’s Day just around [...]

Learn to Cook… week two…

By |2013-03-03T18:45:51-05:00March 3rd, 2013|

Hello all! This week in our Learn to Cook class we tackled the one and only... meatballs! We learned that meatballs are in just about every culture in one form or another... with the flavor and sauce varying depending on the region. Of course we all know the Italian version... or possibly the Swedish meatball... but did you know that in Germany there is a very famous variant of meatballs are Königsberger Klopse, which contain anchovy or salted herring, and are eaten with caper sauce? Or in Indonesia, meatballs are called bakso which are usually served in a bowl, like soup, with noodles, beancurd (tofu), egg, siomay/steamed [...]

Aussie Meat Pies

By |2013-02-03T21:01:19-05:00February 3rd, 2013|

Hello everyone… Chef Jason here… just back from a trip to Australia with my wife Gab and our daughter Charlee. One of the things I look forward to when visiting Australia is the food. Although much of their fare is VERY similar to ours there are little differences that make it very exciting… especially for a Chef. Notably, because of Australia’s location on the planet there are some very different fishes and crustaceans available. Shrimp (which they call Prawns) as big as your fist!! Kiwi fruit is very abundant and MUCH less expensive than it is here in the States. [...]
