Hello all!!

The recpie today comes from my new assistant, Chef Kimmie.

If you missed out on attending our Annual Board Dinner in May then you missed a stellar dessert that was concocted by both Kimmie and I.

Sadly I did not get a photograph of the gorgeous plates but it was comprised of a slice of homemade banana bread, a scoop of vanilla ice cream, topped with hot buttered toasted cinnamon walnuts.

Sounds amazing, right?

Well… here is Chef Kimmie’s Banana Bread recipe if you’d like to give it a try!

2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
3/4 cup light brown sugar
2 eggs, beaten
2 1/3 cups bananas

Heat your oven to 350 degrees Fahrenheit. Spray a 9X5 loaf pan with non-stick spray. In a large bowl mix together the dry ingredients and set aside. Cream together butter and brown sugar. Add in the eggs. Mash the bananas. Stir together the butter mixture and bananas. Fold the wet ingredients into the dry ingredients until moistened. Spread Mixture into the pan. Bake till a knife come out clean and pulls away from the side of the pan (approximately an hour). Let the banana bread cool for about 10 to 15 minutes and remove the loaf from the pan and place on a wire rack to continue to cool.
