Hello everyone!!

My assistant Nick turned me on to this interesting and healthy alternative to classic Tuna Salad. If you are looking for a fresh spin on lunch, give this Avacado Tuna Salad a try!

Ingredients:

  • 2 – 6 oz cans (or packets) tuna in water
  • 1 avocado
  • 1 celery stalk, chopped
  • 1/4 red onion, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • salt and pepper

Instructions:

1. Open cans (or packets) of tuna, put in a bowl. If using canned tuna, drain before putting in the bowl.Add chopped celery & onion.

2. Halve an avocado. Score the avocado lengthwise and widthwise, then scoop with fork. Add to bowl.

3. Drizzle olive oil over mixture and mix well, mashing the avacado as you go until the desired texture is reached (Some folks like the avacado to be left chunkier, some prefer it to be completely smooth).

4. Season with salt and pepper to taste, or any other seasonings you’d like to add.
