Apple Crisp

Hello all… The smell of warm apples and cinnamon wafting thru the air reminds me of Fall. This wonderful Apple Crisp will delight more than just your sense of smell. This isn’t your basic Apple Crisp with butter and flour as a crumb top. The mixture we will use here has oats in it and makes for a much heartier crisp topping. 1 cup all-purpose flour 3/4 cup rolled oats 1 cup brown sugar 1 teaspoon ground cinnamon 1/2 cup butter, melted 4 cups peeled, cored and sliced apples 1/2 cup white sugar 1 tablespoon cornstarch 1/2 cup water 1/2 teaspoon vanilla extract Preheat oven to 350 degrees F (175 degrees C). Toss the apples in the juice of 1 lemon, 1 teaspoon of cinnamon, and 1 teaspoon of nutmeg. In a medium bowl, combine flour, oats, brown sugar, cinnamon and melted butter. Stir until crumbly. Press half the oat mixture into a 9X13 inch baking dish. Cover with sliced apples. In a medium saucepan, combine white sugar, cornstarch, cold water and vanilla. Cook, stirring, until thick and clear, 10 minutes. Pour over apples. Cover apples with remaining crumble mixture. Bake in preheated oven 45 minutes, until bubbly and golden. Father Child Weekend!

Sunday afternoon wrapped up our first annual Father / Child Adventure weekend here at camp. What an awesome way to conclude (almost) our Fall season here at camp! We could not have enjoyed ourselves more as we had 50 families brave the cold to join us. While I got a chance to hang out at boating, archery, and the climbing wall, the highlight of my weekend was the closing campfire Saturday night. After we all had s’mores, the remaining families stuck around to finish the campfire with a stick dedication, a rare occasion outside of summer camp. Thank you to everyone who came out to camp this weekend. We’ll see you again next...

Classic cold side dish…

Helle all… Today we have a classic cold side dish that you can serve almost any time, anywhere… Macaroni Salad. Ingredients: 2 cups dry elbow macaroni, cooked, rinsed, and drained 1/3 cup diced celery 1/4 cup minced red onion, soaked in cold water for 5 minutes, drained 1 tablespoon minced flat-leaf parsley 1/2 cup prepared mayonnaise 3/4 teaspoon dry mustard 1 1/2 teaspoons sugar 1 1/2 tablespoons cider vinegar 3 tablespoons sour cream 1/2 teaspoon kosher salt, plus more to taste Freshly ground black pepper Directions: In a large bowl combine the macaroni, celery, onion, and parsley. In a small bowl, whisk together the mayonnaise, mustard, sugar, vinegar, sour cream and salt. Pour the dressing over the salad and stir to combine. Season with salt and pepper to taste. Serve.
